  • 4 eggs
  • 8 cL of vegetable oil
  • 12 cL of milk (vegetable if you want)
  • 1 packet of baking powder

For best results, ingredients should be at ambient temperature to avoid lumps and for the cake to rise well during baking. For the savory cake, it is better to usevegetable oil instead of butter which will make the texture denser.

Implementation

Start by mixing flour, yeast and salt. Dig one well and crack the eggs in the center. Pour the milk and oil. Mix gently then more vigorously until a homogeneous paste is obtained. If you wish, this is when you can add grated cheese for even more fluffiness.

How to make your cake fluffy?

The cake is often criticized for being too dry.

To obtain a soft cake as desired, the first rule is to cook at low temperature – 160°C – even if it means slightly lengthening the cooking time.

  • 10g baking powder
  • 4g baking soda

Always for a vegan cake, you can also mix 200 g silken tofu, 250 g flour and 125 ml vegetable milk.

To make a gluten-free cake, preferably choose a Chick pea flour or other flours to combine: rice flour and cornflower because rice flour alone is crumbly, Buckwheat flour and potato starch or Chestnut flour and arrow root because the latter two are very dense.
