As everyone knows, summer is the perfect opportunity to prepare tasty barbecues and take advantage of the mild weather, but it’s also the time of year when we particularly like to discover culinary preparations that could be described as refreshing. Not only are our ideas fresh, as you’ll see, but they’ll no doubt be endorsed or approved by most dietitians, which is fine, right?

During our first part, we are going to offer you 2 rather original salad recipes, which will change from the endless lettuce-vinaigrette, or the famous tomato-moza of our childhood… Then, the time of a second part so light, we will move towards a concept much less democratized in France, by offering you 3 recipes for cold soups that will delight the whole family, without the slightest doubt.

To start our series of recipes in style, we have decided to offer you a basic ingredient that is increasingly popular with consumers, but which remains unknown to many families: Quinoa! Here is a very tasty and super fresh salad to discover what quinoa is or to comfort you in the idea that this food is definitely as good in taste as it is for health!

To make the vinaigrette:
– 3 tablespoons of balsamic vinegar
– 1 teaspoon of cumin
– 3 tablespoons of olive oil
– pepper and salt
For the salad itself:
– 70 g to 80 g of quinoa
– 1 onion
– 1 zucchini
– 2 carrots
– 2 tomatoes

  1. First, you will start by washing your vegetables. Once done, carefully peel the onion, zucchini and carrots.
  2. Next, it’s time to cook your quinoa. Boil a pot of salted water and immerse the quinoa in it for about 15 minutes.
  3. When the quinoa is cooked, it is very important to drain it well and then leave it to cool separately; you can put it in the fridge for this.
  4. While the quinoa is stored and cooled on its side, you will now take care of the dressing. Take a large bowl and mix all the necessary ingredients in it, then set aside.
  5. Now all you have to do is mix the quinoa (which normally should be cold now…) with the rest of your salad ingredients and serve! 🙂

Note that it is quite possible to vary the pleasures, by adding a few small pieces of grilled peppers in the preparation, or a few mint leaves, which will give an additional freshness… It’s up to you to see how you want to adapt the recipe according to your tastes!

2/ The Moroccan salad recipe

For this second preparation, we decided to bring you a little exoticism to , and we therefore naturally turned to Morocco, with a fresh and delicious recipe that will delight all members of the family. This recipe is relatively simple to prepare, and does not require a lot of time either. In order to lend you a hand, do not hesitate to hire your children, they will be delighted to help cook an exotic dish! And as for the result, don’t doubt it for a second, it will only be tastier in the end…

  • Preparation time: 15 minutes to 20 minutes
  • Difficulty: really very easy
  • The list of ingredients (the quantities indicated are calculated for 4 people):

For the dressing:

– cumin

– paprika

– 2 squeezed lemons

– olive oil

– pepper and salt

For the salad itself:

– 4 tomatoes

– 2 onions

– 2 cucumbers

– flat-leaf parsley

– fresh mint

  1. First, you will start by washing your vegetables, then once that is done, you will carefully peel the cucumbers and onions.
  2. Then cut the tomatoes into cubes, keeping the pulp, juice and seeds well, then put everything aside.
  3. Now, detail the cucumbers, still in small dice, then again, put everything aside.
  4. Chop your onions as finely as possible, then put them back.
  5. Now let’s get down to making the vinaigrette. To do this, take a large bowl and simply mix together the lemon juice, salt and pepper, and olive oil. Some of you may like to add a touch of mustard, this can be done according to your tastes, however note that this is not the case in the original recipe.
  6. When the vinaigrette has been prepared as specified in the previous step, you will add the paprika and the cumin.
  7. Separately, you will now chop the sprigs of mint very finely, then you will have to incorporate them into the vinaigrette. Then you will mix everything well with a fork or a small whisk, so that the sauce becomes perfectly homogeneous.
  8. Mix all the vegetables that you cut at the beginning of the preparation. To do this, place the tomatoes, onions, cucumbers in a large salad bowl, or in a deep dish, then stir well.
  9. All that remains is to sauce now, and this must be done according to the taste of each guest. This is why we advise you to keep the vinaigrette aside, in a large bowl, so that everyone can help themselves.
  10. Finally, place your preparation in the refrigerator to give the salad time to take on a balanced flavor, but also because it is usually served cold.
  11. Just before serving, you can chop the sprigs of flat-leaf parsley and sprinkle them on top of the salad, to make it even tastier.

Absolutely nothing prevents you from varying this original salad recipe a little… For example, you can add a few small diced avocados, bean sprouts, to see according to your preferences… But don’t doubt it not for a single second, the original recipe is absolutely delicious as we presented it to you!

Our soups for the summer

1/ Gazpacho, a timeless classic

Is there any need to introduce you to gazpacho, this cold soup which comes to us from Spain and which, over there, represents a true national symbol and absolute gastronomic pride! We offer you a very classic recipe at first, because in France, too often, gazpacho is put aside a little and does not fit into people’s eating habits, which is a shame. …

  • Preparation time: about 30 minutes
  • Difficulty: really very easy
  • The list of ingredients (the quantities indicated are calculated for 4 people):

– 800 grams of very ripe vine tomatoes

– 2 cucumbers

– 2 red peppers

– 1 onion

– 1 clove of garlic

– a few basil leaves

– 10 cl of olive oil

– 10 cl of sherry vinegar (or wine)

– salt and pepper

– 200 grams of breadcrumbs

  1. Before anything else, you will have to prune the tomatoes, that is to say: incise the skin of the tomatoes crosswise and immerse them for 1 minute in boiling water. Drain them and then remove the skin.
  2. Then you will cut the tomatoes into quarters and seed them. Then, peel the peppers by cutting them into strips, remove all the seeds and the filaments inside, then pass the blade of a knife between the flesh and the skin.
  3. Once done, cut the pepper strips into cubes.
  4. Now you are going to peel the cucumbers and dice them in turn, then strip the basil and roughly chop it.
  5. Now you have to peel and finely chop the garlic and the onion, and once that’s done, you can mix all these vegetables in a salad bowl and add the 10 cl of olive oil.
  6. Season with salt and pepper to taste, then taste and adjust the seasoning if necessary.
  7. Crumble the breadcrumbs in the bowl of a mixer, then pour in the sherry vinegar and let the breadcrumbs soak, then pour the vegetables and their juice into the mixer bowl
  8. Now you will be able to mix everything until you obtain a very smooth and homogeneous mixture, which will then have to be strained.
  9. Put your gazpacho in the fridge for an hour, because it is served chilled!

2/ Gazpacho, in a more original version

After our most classic gazpacho recipe, we are now going to offer you a variant which is also very successful, and which will delight your taste buds, no doubt about it! This recipe uses zucchini and ricotta as its base ingredients.

  • Preparation time: about 20 minutes
  • Cooking time: 10 minutes
  • Difficulty: really very easy
  • The list of ingredients (the quantities indicated are calculated for 4 people):

– 500g zucchini
– 1 bunch of basil
– 3 tablespoons of olive oil
– 3 tablespoons cider vinegar
– 3 tablespoons of ricotta
– 2 small stalk onions
– 15 cl of water
– salt and pepper

  1. Before starting the preparation, you will have to wash the zucchini.
  2. Once that’s done, you can remove and discard the ends, then slice the zucchini into rounds.
  3. Steam these rings for 10 minutes.
  4. Now you are going to remove the stem from the onions, then peel them and finally, cut them into

  6. Place all the ingredients in your blender (or in a container that will mix them), and mix everything very finely, adding the water gradually.
  7. If necessary, you can completely adjust the seasoning.
  8. Put your zucchini gazpacho in the fridge for about 1 hour and take it out when it’s time to eat!

3/ Frozen cucumber soup

For this last cold soup recipe, we have decided to offer you a cucumber-based preparation. After having tried it at home, we can tell you that it has been a great success, both with adults and children, which in itself is a performance not to be underestimated!

  • Preparation time: about 20 minutes
  • Difficulty: really very easy
  • The list of ingredients (the quantities indicated are calculated for 4 people):

– 1 cucumber

– 100g cottage cheese

– 10 sprig of chives

– 1 handful of pine nuts

– Espelette pepper (to be dosed according to your tastes and the children, of course…)

– salt and pepper

  1. To start, you will wash the chives before finely chopping them.
  2. Once that’s done, you can move on to the cucumber. Start by cutting off the ends and throwing them away. Then you will peel it, remove the seeds with a spoon and cut the flesh into small pieces.
  3. Once this is done, you can mix the flesh with about 2/3 or 3/4 of the chopped chives, a little Espelette pepper (better to put too little than too much…) , salt and pepper.
  4. All you have to do is add the cottage cheese and mix everything well again.
  5. Finally, reserve your soup for a good half hour in the refrigerator and take it out when you are ready to eat.
  6. If you wish, you can distribute the soup in verrines which you will then decorate nicely with a few pine nuts, the rest of the chives and a pinch of Espelette pepper on top (optional).
  7. That’s it, you can serve!
